I made these cookies for our charity class this week and it showed again that sugar is completely overrated. It took less than an eyeblink and the 40+ cookies dissapeared in the mouths of my beloved students, who were amazed about the tasty little bits. 
I promise, these NoSugar Cookies (inspired by peaseandthankyou.com (Thank you.))  are worth a treat!

1 cup unsweetened shredded coconut 
1 cup organic oats
1/4 cup organic coconut oil 
1 t. vanilla extract
1/2 t. baking powder
1/4 t. baking soda
1 egg
pinch of salt 
1/2 organic sugar free chocolate or unsweetened carob chips
optional: sugar free, stevia sweetened drinking chocolate 

1. Combine oats and coconut, toast in oven for a few minutes until golden brown.
2. Cream coconut oil, egg and vanilla extract.
3. Add cooled oats and coconut, baking powder and baking soda.
4. Fold in carob chips or chocolate.
5. Bake for 10-12 minutes / allow to cool for 10 minutes / store in refrigerator.
